Ingredients:
- Olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 can (any size, depending on how much you want) artichoke hearts, drained & chopped
- 1 can (28 oz.) tomatoes, undrained and chopped
- 1 tsp Italian seasoning
- 1/2 tsp dried basil leaves
- 1/4 tsp salt
- 1/4 tsp pepper
- 1.5-2 cups cooked ziti pasta
- 1 can (15 oz.) Cannellini Beans, drained
- grated parmesan cheese
Directions:
- In skillet, heat olive oil. Add onion, garlic & cook until tender, stirring occasionally.
- Stir in artichoke hearts, tomatoes and seasonings. Simmer 20 minutes, stirring occasionally.
- Add pasta and beans. Heat thoroughly, stirring occasionally.
- Stir in Parmesan cheese.
